Head Chef (Indian Curry & Tandoori)

We are seeking an experienced Specialist Indian Tandoori Head Chef with at least five years’ professional experience in authentic Indian cuisine. The successful candidate will be responsible for: • Preparing and cooking authentic tandoori dishes, including tandoori chicken, chicken tikka, lamb tikka, seekh kebabs, seafood, vegetables and naan breads. • Preparing traditional marinades, spice blends, sauces and tandoori starters. • Operating, maintaining and managing the temperature of a traditional clay tandoor. • Developing weekly specials and new tandoori menu items. • Ensuring consistent taste, presentation, portion control and food quality. • Supervising, training and coordinating chefs and kitchen staff. • Managing staff rotas and timesheets. • Monitoring stock, ordering ingredients and controlling food waste. • Maintaining excellent kitchen hygiene and full HACCP compliance. • Explaining dishes, ingredients and allergens to staff and customers. The applicant must be reliable, flexible, computer-literate and capable of working efficiently under pressure. Good English is required; Bengali and Hindi would be advantageous
