Department Duties Check all products, remove out of date stock and record wastage Clean all baskets inserts and confectionary units Take Cake Orders Bake confectionary cakes and other cakes required Merchandise all chill cakes, cuisine range and CDF pastry stand Ensure each item has an SEL and items on promotion has promotional POS Review sales and batch control sheets Prepare and tray up for next bake as per baking plan Clean and tidy main freezer, Bakery Stockroom and rotate stock Check all stock and replenish Tray up products for next day’s trade Complete production sheet for the current day Put all empty boxes and in bailer & follow instructions to empty Review pcoms weekly on the staff notice boards & social media to ensure you have all information on quality, promotions, price and general updates Complete stockcards and place order for required products Ensure the department is clean, glass is clean, floor swept, and all rubbish is removed from the department Ensure a detailed date check is carried out daily – First In First Out Follow the HACCP schedule for cleaning and ensure that all documentation is fully complete Ensure weekly deep clean schedules are adhered to Record temperatures as per HACCP guidelines and report any fault
